Vegan Corn Chowder
Serves:
10-12
Ingredients:
3 Tbsp Avocado Oil
1 Shallot (Thinly Sliced)
1/2 Large Sweet Onion (Small diced)
3 Sticks Celery (Sliced)
4 Carrots (Small diced)
4 Cloves Garlic (Minced)
5 Large Russet Potatoes (Small diced)
8 Corn off Cobs
3 Tbsp Butter
3 Tbsp Flour
2 Cups Vegetable Stock
2 Tbsp Coconut Aminos or Soy Sauce
4 Cups Almond Milk
2 Tsp Oregano, Nutritional Yeast, Basil
1 Tsp Cumin, Chives, Parsley, Turmeric, Smoked Paprika
1/2 Tsp Paprika, Ground Mustard, Thyme, Crushed Black Pepper
1 Tbsp + 1 Tsp Garlic Powder, Salt
1 Tbsp Onion Powder
Instructions:
Heat oil over medium heat & sauté vegetables.
Add in potatoes after 5 minutes.
Add in corn after 5 minutes.
Add in your butter and flour to make a roux.
Add liquids.
Add seasonings once it starts to boil & stir.
Place a lid & cook for 45 minutes on low.
Let Cool and Serve.
