Vegan Corn Chowder

Serves:

10-12

Ingredients:

  • 3 Tbsp Avocado Oil

  • 1 Shallot (Thinly Sliced)

  • 1/2 Large Sweet Onion (Small diced)

  • 3 Sticks Celery (Sliced)

  • 4 Carrots (Small diced)

  • 4 Cloves Garlic (Minced)

  • 5 Large Russet Potatoes (Small diced)

  • 8 Corn off Cobs

  • 3 Tbsp Butter

  • 3 Tbsp Flour

  • 2 Cups Vegetable Stock

  • 2 Tbsp Coconut Aminos or Soy Sauce

  • 4 Cups Almond Milk

  • 2 Tsp Oregano, Nutritional Yeast, Basil

  • 1 Tsp Cumin, Chives, Parsley, Turmeric, Smoked Paprika

  • 1/2 Tsp Paprika, Ground Mustard, Thyme, Crushed Black Pepper

  • 1 Tbsp + 1 Tsp Garlic Powder, Salt

  • 1 Tbsp Onion Powder

Instructions:

  1. Heat oil over medium heat & sauté vegetables.

  2. Add in potatoes after 5 minutes.

  3. Add in corn after 5 minutes.

  4. Add in your butter and flour to make a roux.

  5. Add liquids.

  6. Add seasonings once it starts to boil & stir.

  7. Place a lid & cook for 45 minutes on low.

  8. Let Cool and Serve.
